- 600g tiger prawns
- 1 egg
- soy sauce
- panko bread crumbs
- oil for frying
- Peel and devein prawns, leaving a tip of the tail unpeeled. Keep shells and heads for stock or sauce.
- Cut the back of the prawn, then pass the tail through this cut.
- When all prawns are prepared this way, dust them in flour, then in a mixture of bitten egg with some soy sauce and at last in panko breadcrumbs.
- Fry prawns in hot oil till fully cooked. Enjoy with homemade sweet chilli sauce.
