Fried Tiger Prawns

Ingredients

  • 600g tiger prawns
  • 1 egg
  • soy sauce
  • flour
  • panko bread crumbs
  • oil for frying

Method

  1. Peel and devein prawns, leaving a tip of the tail unpeeled. Keep shells and heads for stock or sauce.
  2. Cut the back of the prawn, then pass the tail through this cut.
  3. When all prawns are prepared this way, dust them in flour, then in a mixture of bitten egg with some soy sauce and at last in panko breadcrumbs.
  4. Fry prawns in hot oil till fully cooked. Enjoy with homemade sweet chilli sauce.
