Chilled Melon & Mint Soup

This week for the first time in the restaurant where I currently work I serve this refreshing Spanish soup. And that was an instant hit!

The recipe is so easy and simple. All you need is to blend those ingredients and chill this soup. And don’t forget to mix it before serving, as some water will separate from solids


  • 3kg melon
  • 50g mint leaves
  • 60g olive oil
  • 2 limes
  • Salt to taste


1. Peel, get rid of seeds and roughly chop melon. Put them in a blender with washed mint leaves.

2. Zest and juice limes. Then add them to the blender with the oil. Blend for 3 minutes. Then pass through a fine sieve. Season to your test.

If you want to give some texture to this soup, then dice some of the melon and place it inside the bowl.

You can substitute limes with lemons.
