This book (or books) is a word’s culinary reference book, I would say culinary encyclopedia. I owe a set of 4 books. Whichever you get it doesn’t matter. You will love it – over 1100 pages of recipes not only classic French – classics from all world. The price is around £45

If you love or want to learn about molecular gastronomy this book is that. I bought it in 2009 and still go back to it as a reference. The price is around £30
